Having grown up consuming the standard American diet, which primarily consisted of meat, chicken, and fish, I often felt conflicted about eating animals. Consequently, I made the decision to stop consuming meat, chicken, and fish during my teenage years. However, at that time, there wasn't readily available information for teenagers seeking to adopt a healthy vegan diet.
Unfortunately, my lack of knowledge about balanced nutrition led to me becoming very ill. In an attempt to obtain protein, I reverted to consuming only chicken and fish, neglecting the importance of vegetables and resorting to more processed foods than ever before. Initially, this seemed like an easier option.
In my adult years, I transitioned to a healthier diet and didn't encounter significant weight issues. However, given the prevalence of high cholesterol in my family, I consistently faced elevated cholesterol levels during yearly checkups. As I entered my mid to late 40s and approached perimenopause and menopause, I began experiencing weight gain.
Three years ago, I hit a breaking point. Fed up with feelings of depression, carrying an extra 30 pounds, being reliant on cholesterol medication, and constantly feeling fatigued, I knew I had to make a change. I immersed myself in research, seeking guidance from available literature, social media, and insights shared by renowned doctors and experts. I invested in numerous books promoting a Whole-Food Plant-Based Diet and ultimately enrolled in a program in plant-based nutrition offered by the T. Colin Campbell Center for Nutrition Studies and eCornell.
Though transitioning to this lifestyle wasn't easy initially—it was a gradual process—I've experienced remarkable transformations since then. I've shed the excess weight, bid farewell to my cholesterol medication, and embraced a highly active daily routine. It's truly been life-changing.
